At den er fermenteret betyder, at den har hængt til tørre i op til en måneds tid i kølige, saltholdige omgivelser.</span><div class="wprm-spacer"></div><span style="display: block;">Traditionelt spises fermenteret fisk med kartofler, grindespæk og <a href="https://nordfra.com/opskrifter/alternativ-garnatalg">garnatálg</a>, men siden sidstnævnte er svære at skaffe i Danmark, har vi arbejdet med at udvikle alternativer.</span><div class="wprm-spacer"></div><span style="display: block;">Alternativet nedenfor er rigtig godt! </span><div class="wprm-spacer"></div><span style="display: block;">Varier mosen som du vil! Blomkålen er meget vandholdig, så hvis du ønsker en fastere mos, kan du enten tilsætte mindre eller helt undlade blomkålen.</span><div class="wprm-spacer"></div><span style="display: block;">Som al fermenteret mad, lugter “ræst fisk”. Her i huset koger vi den ude på grillen for at mindske “generne” inde i huset. Der går alligevel sport i det, når maden er indtaget: Luftes ud, fjernes skrald i en fart og opvasken tages med det samme. <div class="wprm-recipe-summary wprm-block-text-normal"><span style="display: block;">Denne ret skiller vandende, denne meget traditionelle færøske ret: Fermenteret fisk med “garnatálg”.</span><div class="wprm-spacer"></div><span style="display: block;">For os er noget af det vigtigste i denne ret, at kartoflerne bliver kogt sammen med fisken. Det er lidt sjovt, men dengang vi var børn, var smagen af den fermenterede fisk i kartoflerne og “garnatálg”* det, vi helst ville have, og så spiste de voksne det meste af fisken. I dag spiser jeg gerne lidt mere af fisken, men smagen i kartoflerne er stadig meget vigtig for mig.</span><div class="wprm-spacer"></div><span style="display: block;">Dette er en opskrift eller fremgangsmåde, der varierer meget fra hjem til hjem, men jeg vil her komme med mit bud på en traditionel færøsk ret, som er et hit her på matriklen.</span><div class="wprm-spacer"></div><span style="display: block;">Portionen er måske lidt stor, men der kan tages højde for, at færinger i Danmark meget sjældent spiser fermenteret fisk, og derfor bliver der spist ALT for meget, når den endelig bliver serveret 😉 </span><div class="wprm-spacer"></div><span style="display: block;">*<a href="https://nordfra.com/opskrifter/alternativ-garnatalg">Garnatálg</a> finder du beskrevet under &quot;Tilbehør&quot; her på sitet. Når den er tøet lidt op, er det en god idé at tage skindet af, da det er meget nemmere på dette tidspunkt end efter servering.
