Når de er optøet tages de ud af skallen. Læg dem på et stykke film, drys med lidt salt og ganske lidt sukker. Pak dem tæt i filmen og læg i køleskabet &#8211; gerne i nogle timer.</div></li><li id="wprm-recipe-21178-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">De optøede havtaskekæber skal af med alle hinder. Det nemmeste er at gøre det med en lille skarp kniv og så fingrene, så man kan mærke, at de er helt væk.</div></li><li id="wprm-recipe-21178-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Læg kæberne på fad og drys med lidt salt. Sæt i køleskab &#8211; gerne et par timer inden de skal tilberedes.</div></li><li id="wprm-recipe-21178-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Løget skæres i små tern og sauteres på pande i smør &#8211; tilsat ganske lidt karry.</div></li><li id="wprm-recipe-21178-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">De små tomater halveres og lægges på et stykke bagepapir i en bradepande. Havtaskekæberne steges nogle få minutter på hver side alt efter størrelse på kæberne. Lad bare skallerne blive siddende på løgene, de giver en god farve til suppen.</div></li><li id="wprm-recipe-16440-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Grøntsagerne steges ved middelvarme i smør i en stor gryde, til de bliver bløde og begynder at brune i kanterne.  Det tager længere tid end man regner med – omkring 10 minutter.</div></li><li id="wprm-recipe-16440-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Grøntsagerne tages op og sættes til side.</div></li><li id="wprm-recipe-16440-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Jomfruhummerskallerne og -hovederne steges nu i gryden ved meget høj varme i olie i fem minutters tid. Sørg for at røre rundt og bevæge skallerne konstant, så de ikke brænder alt for meget på. De skal få god farve.</div></li><li id="wprm-recipe-16440-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Hvis man har mod på det, kan man nu flambere skallerne ved at hælde ½-1 dl spiritus (cognac, brandy Pastis, Calvados eller æblebrændevin) ned i gryden, og tænde med en tændstik.  Tag gryden væk fra emhætten, mens du flamberer!</div></li><li id="wprm-recipe-16440-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Lad flammerne dø helt hen inden næste trin.</div></li><li id="wprm-recipe-16440-step-0-13" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Tilsæt tomatpureén sammen med en smørklat og lad den få varme et par minutter.</div></li><li id="wprm-recipe-16440-step-0-14" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Knus skallerne så godt som muligt med noget tungt, meget af smagen sidder inde i hovederne.</div></li><li id="wprm-recipe-16440-step-0-15" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Det bliver noget værre smatteri, og det skal det være.</div></li><li id="wprm-recipe-16440-step-0-16" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Tilsæt hvidvinen, grøntsagerne og krydderurterne efterfulgt af så meget vand, at det står 10-15 cm over skallerne og grøntsagerne.  Lad koge op og fjern urenheder med en hulske eller efterhånden som de kommer op til overfladen.</div></li><li id="wprm-recipe-16440-step-0-17" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Lad suppen simre et par timer, og lad den så stå og trække i gryden et par timer.</div></li><li id="wprm-recipe-16440-step-0-18" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Suppen sigtes først gennem en alm. sigte og derefter gennem en meget fin sigte.</div></li><li id="wprm-recipe-16440-step-0-19" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Man kan evt. bruge en ren ”gammeldags” karklud af stof eller ostelærred til den sidste sigtning.</div></li><li id="wprm-recipe-16440-step-0-20" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pres så meget saft og kraft ud af skaller og grøntsager som muligt.</div></li><li id="wprm-recipe-16440-step-0-21" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Suppen koges nu ind til ca. halvdelen, fløden hældes i, og den koges ind igen til den smager godt og kraftigt. Smag på den undervejs.</div></li><li id="wprm-recipe-16440-step-0-22" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Til sidst smages til med citronsaft, sukker, salt og peber.
