<div class="wprm-recipe-summary wprm-block-text-normal"><span style="display: block;">Opskrift på bacalao, en traditionel ret fra det spanske køkken. </span><div class="wprm-spacer"></div><span style="display: block;">Herhjemme kender vi ikke meget til bacalao, eller <a href="https://nordfra.com/produkter/bacalao">klipfisk</a> generelt, men i Spanien og Portugal er klipfisken flittigt brugt. Faktisk betyder bacalao “klipfisk”, altså samme navn som selve retten.</span><div class="wprm-spacer"></div><span style="display: block;">Klipfisk er egentlig bare tørret og saltet torsk. Den måde man konserverede på i gamle dage. Der foregik tørringen på klipperne, deraf navnet. I dag er tørringen dog rykket indendørs.</span><div class="wprm-spacer"></div><span style="display: block;">Bacalao kan laves på mange måder. Jeg har lavet min bacalao med de smage jeg foretrækker. </span><div class="wprm-spacer"></div><span style="display: block;">Da klipfisk, trods udvandingen, er ret salt i sig selv og oliven bidrager også med salt, vil jeg anbefale at vente med at smage saucen til, til lige inden klipfisken kommer i. Tilsæt kun ganske lidt, &#8211; fisken afgiver også salt til retten. </span><div class="wprm-spacer"></div><span style="display: block;">Hellere sætte ekstra salt på bordet til serveringen end at retten er for salt.</span></div>

Lad den trække på køl i minimum 24 timer og op til 48 timer. Skift vandet 2-3 gange i døgnet. Jeg lader den helst trække +36 timer.</div></li><li id="wprm-recipe-42340-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Klipfisken er meget sej inden den er udvandet, så når klipfisken er udvandet i 12 timer, kan du med fordel skære den i de stykker den skal tilberedes i. Ved at skære den i mindre stykker udvandes den bedre, og du sikrer at resultatet ikke bliver for salt. Fjern også eventuelle ben med en tang – eller lad dem sidde til efter tilberedning – der vil det være meget nemmere at fjerne dem.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Dag 2</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-42340-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Forbered ingredienserne som beskrevet i ingredienslisten.</div></li><li id="wprm-recipe-42340-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Lad gerne skrællen blive på kartofler, men rens dem grundigt. Du kan naturligvis også skrælle dem.</div></li><li id="wprm-recipe-42340-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Varm en pande op og steg løgene klare i en god sjat olivenolie ved middel varme.</div></li><li id="wprm-recipe-42340-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Tilsæt peberfrugt og hvidløg og varm det med til peberfrugterne begynder at dufte &#8211; ca. 5 minutter.</div></li><li id="wprm-recipe-42340-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Drys krydderierne over, krydr med peber og vend det godt sammen.</div></li><li id="wprm-recipe-42340-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Tilsæt tomatkoncentrat, lad det varme med et minuts tid og hæld derefter hvidvinen over. Lad den koge i 3-4 minutter ved god høj varme.</div></li><li id="wprm-recipe-42340-step-1-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Hæld bouillon, hakkede tomater, kartofler og oliven ved og rør det sammen.</div></li><li id="wprm-recipe-42340-step-1-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Læg låg på panden, og lad retten simre ved svag varme i 10 minutter. Fjern skindet og dup stykkerne godt tørre med køkkenrulle. Er stykkerne endnu ikke skåret i mindre stykker, skal du gøre det nu. Gerne i minimum 8 stykker &#8211; så de ikke er for store.</div></li><li id="wprm-recipe-42340-step-1-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Efter 10 minutter fjernes låget og retten simrer videre til kartoflerne er næsten møre &#8211; og saucen koger let ind.</div></li><li id="wprm-recipe-42340-step-1-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Smag samtidig saucen til med friskkværnet peber og evt. en smule salt. Husk at fisken lige straks skal tilberedes i saucen, og den afgiver også salt.</div></li><li id="wprm-recipe-42340-step-1-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fordel klipfisken i tomatsaucen.
