<div class="wprm-recipe-summary wprm-block-text-normal"><span style="display: block;">Grillet rødfisk med mangosalsa og bbq-majs. </span><div class="wprm-spacer"></div><span style="display: block;">Fisk kan være nervepirrende at tilberede på grillen, og mange har oplevet at den klistrer sig ubehjælpeligt fast på grillristen og enten går totalt i stykker, eller bliver gennemstegt og tør.  Hvis man husker på disse enkle regler, er man dog sikker på succes foran grillen.</span><div class="wprm-spacer"></div><span style="display: block;">1)  Grillristen skal være så varm som muligt, &#8211; skru helt op for gassen, eller læg risten lige over kullene.</span><div class="wprm-spacer"></div><span style="display: block;">2)  Umiddelbart inden fisken skal stege, rengøres grillristen meget grundigt med en grillbørste af metal og smøres derefter med olie. Man kan bruge køkkenrulle eller en ren klud til at smøre olien på.</span><div class="wprm-spacer"></div><span style="display: block;">3)  Fisken duppes så tør som muligt med køkkenrulle.  Krydr derefter med salt og peber, og pensel med rigeligt olie.</span><div class="wprm-spacer"></div><span style="display: block;">4)  Start med at stege på skindsiden, og lad fisken ligge til den selv slipper risten.  Skindet beskytter det fine kød mod varmen, og det må godt branke. Når man steger fisk uden skind, starter man med at stege på kødsiden, da den så får de pæneste grillmærker til at vende opad når man anretter.</span><div class="wprm-spacer"></div><span style="display: block;">5)  Tag fisken af et par minutter inden du mener, den er gennemstegt – den trækker færdig de næste 5 minutter efter den er kommet af grillen. Den ene ret er lidt større og kraftigere end den anden, så jeg vil driste mig til at kalde dem henholdsvis: en herremad og en damemad. Servér den sur-søde limesirup i en lille skål eller kande som lækkert ekstra dryp til begge madder.</span><div class="wprm-spacer"></div><span style="display: block;">Begge retter kan spises lune, men er også lækre som afkølede, så du behøver ikke gå i panik over det tidsmæssige. Kog ingredienserne på panden ind med lidt reven chili. Det skal koges indtil der opnås en cremet konsistens.
